Production area: Valpolicella, Verona – Italy.
Grape Variety: 65% Corvina and Corvinone, 25% Rondinella, 10% Molinara.
Aging: french oak barrels for 18 months. 12 month bottle.
Color: intense garnet red, with orange edges due to maturation.
Fragrance: clean and complex aromas of berries and sugared almonds, cherries and black cherries in alcohol, spices, vanilla, chocolate, cinnamon and licorice.
Taste: dry, full body, tannic and soft.
Serving Temperature: open at least an hour before pouring and serve at 18°- 20° C.
Pairing suggestion: pandoro di Verona, tarts and dry desserts. The perfect combination with red meat game will truly surprise you. with a strong flavor (boar, deer, etc.), with pigeon and very old, spicy cheeses.
He is considered by many to be the father of Amarone . He is appreciated by those who didn’t like traditional Recioto because it was too sweet. The name “amandorlato” derives from its lower sugar content (according to old stories for its hint of almond or for its more austere notes).
During the harvest, as with traditional Recioto, the healthiest and ripest external parts of the bunch (in dialect recie meaning ears) are collected and selected. These are left to dry until February of the following year, in order to obtain the highest possible sugar content. The must then ferments until April in steel and after an initial racking, the sugar residue is exhausted in old oak (September – October).
