Grape Variety: Ribolla gialla 100 %.

Aging:

Color: golden yellow color with brilliant highlights.

Fragrance: delicate floral and fruity notes of apple and peach, ending with spicy hints of vanilla, licorice and saffron.

Taste: on the palate important acidity notes of the variety stand out. It starts with a clear sensation of freshness, combined with a slight tannic note typical of this variety, and closes by leaving the mouth dry and well-cleaned.

Serving Temperature: 8° – 10° C.

Pairing suggestion: excellent with first courses or with grilled fish, with shellfish including red prawns with chickpea puree, and with lightly smoked prosciutto. It pairs very well with aged cheeses, better if goat’s milk. Finally, it is excellent with legume soup.

Description

The Ribolla Gialla is a yellow grape, as the name itself indicates – yellow.
Its wines can range from light and crisp to more complex and structured expressions, often with notes of citrus and white flowers.
It has been cultivated since Roman times in its area of excellence, in the hills around Rosazzo.
The Ribolla Gialla grape is known for its high acidity, making it a great option for sparkling wines and aging potential.
In Slovenia and Croatia, the grape is called Rebula, and it is believed that its origin was precisely in the southern Dalmatian islands or farther south to Kefalonia.
The grape’s adaptability to different terroirs and winemaking techniques has contributed to its popularity and spread beyond its original roots.
Reportedly, the grape was then imported to Friuli by Venetian merchants in more recent times, around 1100, and its territory of excellence is still the hilly area between Udine and Gorizia..
Today, Ribolla Gialla is celebrated for producing wines that reflect the distinct characteristics of the Friuli region, showcasing its unique terroir and winemaking traditions.
